1 msk socker
Deg:
200 g mjöl
1 medelstort ägg
1/2 tsk salt
1 msk mortlard kardemumma
100 g rumstempererat smör
1 dl socker
Värm mjölken till 37 grader. Smula jästen i en bunke och rör ut med lite av mjölken. Tillsätt resten av ingredienserna till fördegen och arbeta ihop degen tills den känns smidig (den kommer fortfarande vara kletig). Täck över med plastfolie och låt jäsa ca 1 timme.
Måtta upp resterande ingredienser till degen och rör ner dem med fördegen. Knåda tills degen känns smidig och fortfarande är lite kletig. Täck med plastfolie. Låt jäsa ca 2-3 h.
Stjälp upp degen och dela den i ca 18 bitar. Forma dem runda med bestämda cirklande rörelser mot bänken eller i handen och lägg dem på bakpappersklädda plåtar. Låt jäsa i cirka 1 timme till.
Sätt ugnen på 200 grader och grädda i cirka 8 minuter. Det kan variera ganska mycket beroende på ugn men bullarna ska ha en fin gyllenbrun färg och inte vara brända innan de är klara.
Låt bullarna svalna och skär eller klipp sedan trekantiga lock. Här kan man antingen välja att gröpa ur lite inkråm för att använda tillsammans med mandelmassan i fyllning men det är en smaksak och jag gör det sällan.
Fyll sedan bullarna med mandelmassa, antingen blandad med inkråm och lite grädde för att få en krämigare fyllning eller om man gillar fastare mandelmassa så går det att antingen riva eller skära skivor för att använda som fyllning. Toppa bullarna med vispad grädde och dekorera sen med florsocker.
